Preheat the oven to 400ºF (205ºC). Line a baking sheet with parchment paper.
Place the beets on the baking sheet. Toss with the oil and season with salt and pepper. Roast for 20 minutes or until tender. Set aside.
Meanwhile, blend the goat cheese, water, honey, and lemon juice until smooth. Season with salt and pepper and adjust the consistency with more water as needed.
Divide the microgreens onto each plate. Top with the beets, shallots, and walnuts.
Drizzle with the goat cheese dressing on top and season with salt and pepper. Enjoy!
