Pineapple Pork & Shrimp Stir Fry

Ingredients
  

  • 2 2/3 tsp Extra Virgin Olive Oil (divided)
  • 10 2/3 oz Pork Chop (boneless, sliced)
  • Sea Salt (to taste)
  • Black Pepper (to taste)
  • 1 1/3 Yellow Onion (medium, sliced)
  • 1 1/3 Red Bell Pepper (medium, sliced)
  • 2 2/3 cups Broccoli (chopped into florets)
  • 6 2/3 oz Shrimp
  • 2 2/3 tbsp Rice Vinegar
  • 2 tbsp Miso Paste
  • 1 1/3 cup Frozen Pineapple (defrosted)

Method
 

  1. Heat a large pan over medium heat. Add half the oil.
  2. Season the pork with salt and pepper and cook for three to five minutes or until lightly browned. It won't be cooked through just yet. Remove from the pan and set aside.
  3. Add the remaining oil to the same pan. Sauté the onion, bell pepper, and broccoli for three to five minutes, or until tender-crisp. Add the pork back to the pan along with the shrimp. Cook until the pork and shrimp are cooked through.
  4. Mix the rice vinegar and miso paste in a small bowl. Add it to the pan, tossing everything together. Add the pineapple and mix to combine until everything is warmed through. Enjoy!
