Ingredients
  

  • 3 tbsp Extra Virgin Olive Oil
  • 1 Lemon (juiced)
  • 2 tsp Honey
  • 1 tbsp Shallot (diced)
  • Sea Salt (to taste)
  • Black Pepper (to taste)
  • 8 cups Mixed Greens
  • 2 cups Raspberries (plus extra for garnish)
  • 1 Avocado (large, sliced)
  • 2/3 cup Goat Cheese (crumbed)

Method
 

  1. In bowl, whisk together the oil, lemon juice, honey, shallot, salt, and pepper.
  2. Arrange the mixed greens, raspberries, avocado, and goat cheese on a serving platter. Drizzle with dressing and enjoy!
