Baked Goat Cheese & Sun Dried Tomato Dip

What we love about this recipe, besides the taste (obviously!) is the protein content and healthy fats from the goat cheese, plus the antioxidants from the tomatoes. Pair with your choice of pita, whole grain crackers or tortilla chips! Perfect party appetizer!

Ingredients
  

  • 1 1/2 cups Goat Cheese
  • 1/2 cup Cream Cheese, Regular
  • 1 tbsp Extra Virgin Olive Oil
  • 1/4 cup Sun Dried Tomatoes (chopped)
  • 1 tbsp Parsley (finely chopped)
  • 5 oz Whole Grain Crackers

Method
 

  1. Preheat the oven to 400ºF (205ºC).
  2. In a food processor combine the goat cheese, cream cheese, and oil. Process until smooth and creamy. Add the sun dried tomatoes and mix to combine with a spoon.
  3. Transfer the goat cheese mixture to an oven safe baking dish and place in the oven. Bake for 16 to 18 minutes, until bubbly and warm.
  4. Top with parsley and serve with crackers. Enjoy!
