Course: Main Course

Ingredients

  • 1 cup Jasmine Rice (dry, rinsed)
  • 2 tbsp Avocado Oil
  • 12 oz Lean Ground Beef
  • 2 Red Bell Pepper (medium, chopped)
  • 4 cups Green Beans (trimmed)
  • 1 Yellow Onion (medium, chopped in large chunks)
  • 2 tbsp Tamari
  • 2 tbsp Oyster Sauce
  • 1 tbsp Fish Sauce
  • 1 tsp Coconut Sugar
  • 1 cup Thai Basil (packed)

Method

  1. Cook the rice according to the package directions.
  2. Heat a large pan or wok to medium-high heat and add the oil. Add the beef and break it up as it cooks. Let it cook undisturbed for about one to two minutes to get browned and crispy on one side. Flip and continue cooking, stirring until cooked through and crispy. Remove the beef with a slotted spoon and set aside.
  3. Add the bell pepper and green beans and cook until just starting to brown around the edges, about two minutes, tossing often. Add the onion and cook for one minute.
  4. Add the beef back into the wok. Add tamari, oyster sauce, fish sauce, and coconut sugar and toss to combine. Add Thai basil and toss again until just wilted.
  5. Divide the rice and beef mixture evenly between plates. Enjoy!
