Refreshing #Watermelon Recipes!

Hey did you know today is National Watermelon Day?!? Who knew?!

Below are two refreshing recipes you can test out today… let me know what you think!

Watermelon Protein Shake

1 cup Watermelon, diced
1/2 cup Unsweetened Vanilla Almond Milk or 2% milk
Ice Cubes to taste
(Add in some handfuls of spinach for an added nutrition boost!)

Watermelon and Feta Salad with Arugula and Spinach
Ingredients
1.5 tablespoons extra-virgin olive oil
1 teaspoons white balsamic vinegar
1/8 teaspoon kosher salt
1 cups arugula
1 cups baby spinach leaves (or a mix of your favorite greens!)
1/2 cup thinly sliced red onion
1/2 cup grape tomatoes, halved
1/4 cup crumbled feta cheese
1 cups bite sized watermelon chunks
Directions
Whisk the olive oil, white balsamic vinegar, and salt together in a small bowl; set aside.
Combine the arugula, spinach, onions, and tomatoes in a large salad bowl. Drizzle the vinaigrette over the salad mixture; toss to coat. Add the feta cheese and watermelon to serve.
