Easy to Make Cheeseburger Sliders

If you are anything like me… you are constantly eating on the run. I LOVE finding recipes I can prep in advance so all I have to do when I get home is pop my entree in the oven.

The other night I made Cheeseburger sliders (in the oven!), fresh green beans for my garden paired with some sweet potato fries.

Here is the recipe!

2 pounds of lean beef or turkey, or a mix of the two. (Next time I make, I am only going to use 1.5#).
1/4 onion diced fine
1/2 cup breadcrumbs (I used whole wheat)
1 egg

Preheat oven to 400 degrees
Mix thoroughly. Spread in a 9 X 13 pan, bake in oven for 30 minutes.
Pull pan out and top with 2% shredded cheese, put back in oven for a few more minutes until it melts.
Cut meat into squares to fit onto mini rolls.

Top with lettuce, tomato, onion, etc
Add to mini whole wheat bakery bun and you are done!

Possible side items:
Steamed or grilled green beans, asparagus, broccoli, etc
Fresh side salad
Sweet potato fries (my new obsession)
Quinoa salad- posting recipe next week!
