Quick Spinach and Tomato Melt !
Life on the run with 4 kids often times leaves me no option but to whip up something quick and easy.. but healthy in the kitchen!
This recipe is one of my go-to’s for lunch on the weekends or a quick dinner (for the family or just for myself!). I have about 15 variations but here is one of them!
Spinach Tomato Melt

2 Small Azteca No Preservative Tortillas (Found in refrigerated section)
1 small tomato, chopped
Handful fresh spinach leaves
1/4 purple onion sliced
Basil/Oregano/Garlic
1/4c 2% Colby Jack cheese
Heat up tortillas in oven microwave or Pizazz (love that thing even though it’s an eye sore on my counter!)
Sprinkle ingredients on tortillas
Warm for about 5-7 minutes until cheese and spinach melts
Ta-Da! Done
Other ingredients to add:
Peppers, onions, broccoli, chicken, turkey, sirloin, ground turkey or beef, you name it!
Pair with some fresh salsa and you have a quickie meal! Light enough to not weigh me down but I enjoy something warm in my stomach, especially as the temps outside start to dip.
