Beet Salad with Goat Cheese Dressing
Ingredients
Method
- Preheat the oven to 400ºF (205ºC). Line a baking sheet with parchment paper.
- Place the beets on the baking sheet. Toss with the oil and season with salt and pepper. Roast for 20 minutes or until tender. Set aside.
- Meanwhile, blend the goat cheese, water, honey, and lemon juice until smooth. Season with salt and pepper and adjust the consistency with more water as needed.
- Divide the microgreens onto each plate. Top with the beets, shallots, and walnuts.
- Drizzle with the goat cheese dressing on top and season with salt and pepper. Enjoy!

Refrigerate the ingredients separately in an airtight container for up to three days.Serving Size:
One serving is approximately two cups of salad and 1 1/2 tablespoons of dressing.More Flavor:
